The Easiest Slow Cooker Vegetarian Chili
Ingredients
1 large onion, peeled and chopped
1 pepper blanched, seeded and diced
1 red bell pepper, seeded and chopped
2 garlic cloves, minced
1 (28 ounces) can fried diced tomatoes
1 (8 ounces) tomato sauce
2 (15 ounces) cans of chili beans
1 tablespoon chili powder
1 tablespoon of caraway seeds
1 tablespoon smoked paprika
1 teaspoon coriander
1 to 2 teaspoons of salt more or less to taste
1/2 teaspoon chili flakes more or less to taste
1/3 cup quinoa (any grade)
3 cups vegetable stock or water
Instructions
- Add all ingredients to the slow cooker and turn it on. After 2-3 hours, turn the crock-pot down and leave it covered for another 4-6 hours. (On the other hand, you can just leave the slow cooker for 8 hours).
- Before you are ready to serve, remove the lid and turn back for a maximum of another 30 minutes. Try and adjust the seasonings as needed!
