BRUSCHETTA CHICKEN CASSEROLE FOR A DELICIOUS CLEAN EATING DINNER IDEA!
Ingredients
1 pound Chicken breasts, or tenders, cut into bite-sized pieces
1 tablespoon avocado oil or olive oil
6 ripe rum tomatoes, chopped and lightly sprinkled with sea salt
3 fresh cloves of garlic, minced or minced
1 cup grated mozzarella
1 teaspoon dried oregano
2 tablespoons high quality balsamic vinegar
sea salt and ground black pepper to taste, about 1/4 teaspoon each
a small handful of fresh basil leaves, chopped
food spray
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- Heat oil in a skillet over medium heat, add chicken and season with sea salt and freshly ground black pepper.
- Cook, stirring occasionally, until golden brown on the sides and almost do not fry.
- Transfer the chicken to an 8x8 baking dish (sprinkle or oil to prevent sticking), chop the tomatoes, oregano, garlic and drizzle with balsamic vinegar.
- Sprinkle mozzarella cheese.
- Place the casserole in a preheated oven without covering, and bake for 18-20 minutes until the cheese melts and the sauce begins to bubble at the bottom of the dish.
- Remove from the oven, cover and let the casserole stand for 5 minutes, then decorate with fresh basil and enjoy!
