CRANBERRY ALMOND ENERGY BITES
Ingredients
1 century oatmeal
1/3 in. chopped almonds
1/3 in. sweetened grated coconut
1 tbsp. L. ground flaxseed optional
1/2 in. peanut butter or almond butter are both good
1/4 in. honey
1 tbsp. L. Chia seeds
1/3 in. coarsely dried dried cranberries
Instructions
- Bake oatmeal, almonds and coconut for 8-10 minutes at 350 °, stirring after 5 minutes. Let the mixture cool.
- In a medium bowl, heat peanut butter for 20-30 seconds until cooked, add the baked mixture along with flaxseed, honey, chia seeds and cranberries in a bowl. Form into 1.5 "balls and refrigerate. Store in an airtight container in the refrigerator for up to one week or in the freezer for 3 months.
