Easy Pesto Tortellini Pasta Salad
Ingredients
(1) cheese tortellini
1 cup pesto
1 and 1/2 cup cherry tomatoes, cut in half
(1) 12 oz mozzarella balls in a container, drained
1/4 cup red onion, diced
Instructions
- Bring a large pot of salted water to a boil. Add tortellini and cook for 1 and 1/2 minutes. Do not overdo it!
- Drain and rinse under cold water until cool.
- Place the tortellini in a large serving bowl. Add pesto, tomatoes, cheese and onions. Stir well to coat.
- Serve immediately or cover and refrigerate for up to 5 days.
