LOW CARB PIZZA CASSEROLE

A low-carb pizza casserole is a gluten-free pizza keto casserole that includes all your favorite carbohydrate-free pizza flavors!

This low-carb pizza casserole solved all my pizza problems! This delicious pizza casserole, filled with all the flavors of pizza, sauce, pepperoni, sausage, mushrooms, pepper, lots of cheese, skips traditional pasta and replaces it with cauliflower.

This is a gluten-free keto casserole that is so good that you don’t even miss the crust!

INGREDIENTS

Cauliflower flowers 14 ounces, cut into bite-sized pieces
½ teaspoon of salt
2.5 oz pepperoni
2 pounds of Italian sausage if removed from the shell before cooking
1 tablespoon of olive oil
8 oz mushrooms, chopped
1 green pepper, sliced
Mozzarella Cheese 12 ounces grated
1.5 cups low carbohydrate sauce, we use Rao's homemade marinara
1/4 cup parmesan cheese, powdered
1 teaspoon Italian seasoning

INSTRUCTIONS

  1. Steam the cauliflower. Place chopped cauliflower in a microwave bowl with 1 cup of water. Cover with a damp paper towel and place in the microwave for about 3 minutes or until the cauliflower is soft. Do not overcook!
  2. Drain a piece of cauliflower dry with a paper towel. Set aside.
  3. Preheat oven to 400 degrees Fahrenheit
  4. In a large frying pan over medium heat, cook Italian sausage for about 15 minutes. When the sausage has finished cooking, drain the excess fat. Set aside.
  5. In the same frying pan in olive oil and fry the mushrooms over medium heat for 10 minutes to remove excess water. Set aside when done.
  6. Prepare a 13 × 9-inch casserole dish by spraying it with a non-stick spray, and then distribute ½ cup pasta sauce at the bottom.
  7. In a large bowl, add cauliflower, boiled Italian sausage, mushrooms and green pepper. Mix until well blended.
  8. Place ½ mixture in a pan. Top with ½ cup pasta sauce followed by ½ pepperoni (kind of pressing them between other toppings), and finally 6 ounces of mozzarella cheese.
  9. Then spread the remaining toppings mixture onto the cheese, then pepperoni (leave 10 slices of casserole), the remaining half a cup of pasta sauce and 6 ounces of mozzarella.
  10. In a small bowl, combine Parmesan cheese and Italian seasoning.
  11. Sprinkle the parmesan mixture on the casserole and top with 10 slices of pepperoni.
  12. Put in the oven and bake for 30 minutes or until the casserole is hot and the cheese is completely melted.
